This Southern Tomato Pie is more than just a recipe, it's a
celebration of Summer's best flavors.
This delicious Tomato Pie is filled with a variety of sweet tomatoes,
a buttery crust and a creamy cheesy topping.
Whether you're cooking for family, guests or just treating yourself
it's hard not to fall in love with it in every bite.
Go ahead a bake one up and taste the Southern charm yourself.
Few things you will need to get that
Tomato Pie on the table.
Slice about 4-5 tomatoes to your desired thickness.
The truck just brought in the tiny Tomatoes
and they are going in the pie too.
Cherry Tomatoes Always Cheer Me Up. :)
Lay all the Tomatoes on some paper towels and
sprinkle them with salt.
The salt will help absorb moisture out of the Tomatoes.
Place a second towel on top and leave
them for 5-10 minutes.
Grab a 9 inch pre-made pie crust and fit it into
your pie plate. I used the Pillsbury brand.
Bake the pie crust for about 15 minutes till just slightly golden.
Now for the cheese topping....
Slice up some Shallots and Garlic. Go crazy with the
GARLIC if you love GARLIC like I do.
Basil & Tomatoes are teammates so slice some up.
In a medium bowl add in....
1/2 cup of Mayonnaise
1/2 cup of shredded sharp Cheddar Cheese
1/2 cup of Monterey Jack Cheese
Basil, Garlic and Shallots
Salt & Pepper to taste
I say yes to Grey Poupon :)
A dollop of Grey Poupon and give the bowl a mix.
Have a taste, you can always add more.
Pie crust is out of the oven but let it cool
before filling it up with all the YUM.
First Sprinkle the pie crust with a bit
of Cheddar Cheeses and Monterey Jack.
Layer in some of the Tomatoes next.
Dashes of some Basil.
More Cheese over the Tomatoes.
Another layer of Tomatoes & Basil.
Spoon that delicious cheesy sauce all over
the top of the Tomatoes.
Bake this Tomato Pie in a 350 degree oven
for about 45 minutes or till it's
perfectly browned,
While the Tomato Pie is baking lick this
bowl because it's Tasty!
I say it's perfectly browned and WOWZA it smells so good.
One more step....
Give the Southern Tomato Pie some Charm with some Garnish.
Let the pie cool a bit before slicing it up.
Time to enjoy some Southern Charm.
