Pastina Soup is the ultimate Italian comfort food. It's nutrient packed and
super easy to make. For sure whip this soup up

This soup has veggies and is made with a rich broth from a parmesan rind to get plenty of
delicious flavor in every sip :)
You can make this soup with or without a protein, I added Chicken :)
My little Sous Chef is here again to help me in the kitchen.
Chop up...
1 cup of carrots
1 cup of celery
1/2 cup yellow oinon
In a large pot add 2 tablespoons of olive oil and
some salt & pepper.
Tumble in all the vegetables to the pot.
Squirt in some garlic and saute for a few minutes
until the onions are soft on medium heat.
Pour in 5 cups of a good Chicken Broth to the pot.
I just love the color and design on this chicken broth box.
Yellow & Checks!
One cup of water into the pot.
Slice the rind off off of your favorite Parmesan cheese.
Add the Parmesan rind and bring this soup to a boil.
Chop up some roast chicken while soup is starting to cook.
Have a taste to see if you my want a bit more salt & pepper.
Pasta Time!
Measure out one cup of Pastina Pasta.
What is Pastina Pasta?
Pastina Pasta in Italian simply means tiny pasta shape or small pasta.
Tumble in the Patina Pasta and cook for about 15 minutes
or until the vegetables are completely cooked.
Add the chicken in and stir. Heat for about 5 minutes.
Remove the Parmesan rind because it has done it's job with the
FLAVOR.
Squeeze the juice of half of a lemon to the
soup just before serving.
Put a lid on is while you grab the bowls.
Ready for Soup.

Pastina Soup...
To-store: Store any leftover in an airtight container in the refrigerator
for up to 3-4 days and just reheat.
To-freeze: Place in an airtight container and freeze for up to 3 months.
Thaw on the counter for a few hours and reheat.
To- Gift The Soup: Wrap a bright color bow on the container and place
in a cute bag with a bottle of wine and some homemade cookies then
DELIVER it your friend :)
