CHILI

 


At the first hint of cold weather, I start craving Chili.

This recipe I have is so simple and tastes great too. Be sure to make
plenty for leftovers and some to freeze :)

My granddaughter Betty had her first Birthday Party and I made
this Chili for her party. I tripled the recipe for sure.


My Chili recipe starts like this, and yes I cheat with the
Chili packet spices mix :)


Saute one onion in some olive oil, salt and pepper.


Plop in a half spoonful of chopped garlic from a jar.


Toss in 2 lbs of ground beef and mix the pot well.
Cook on medium heat till the beef is cooked and all browned up.


Drain and rinse 2 cans of red kidney beans under water.


Once the beef is cooked add some salt & pepper to taste.


Toss in two packets of the chili spice mix and stir the pot.
I will taste later to see if I need one more packet.


Perfectly mixed.


Pour in two 28 oz. cans plus one 14.5 oz. can of Fire Roasted Diced tomatoes to the pot.

Keep the pot on medium high heat.


Add into the pot half a can of tomato paste
and a few shakes shakes of red pepper flakes to taste.


Secrete ingredient to this Chili recipe is
Worcestershire Sauce!


Some big shake shakes with the
Worcestershire Sauce!


Half a can of water from the 14.5 oz tomato can.


Have a taste to see if you need a little more this or that :)


One more packet of Chili spice mix and a few more
shakes of the Worcestershire sauce works for my taste.


Grab the red kidney beans.


Tumble in all the beans into the pot and mix.


Bring the Chili up to a low boil and then 
turn the heat down low.


This pot of Chili is done. 

Truth be told I like to make my Chile the day before I plan to
serve it. For some reason it just tastess better after
in sits in the refrigerator overnight.


Cover and off to the refrigerator until tomorrow it goes.


Reheat the Chili and grab some bowls because 
It's Chili Time in my kitchen.


Time to eat.

Top your Chile with....

Cheese
Green Chiles
Hot Sauce
Sour Cream
Frito Chips


For sure you can have seconds.

This was the large pot of Chili I made for my granddaughter
Betty's 1 year old Birthday party and it
was a hit with the crowd :)


Lucky we had a few containers of  Chili left to freeze.
