This Fall Soup is so flavorful and loaded with sausage, fresh spinach, and tender
cannellini beans. It's simple to make and perfect for a cosy
FALL DAY!
Soup weather is here.
Grab a large bright Orange cast iron pot to cook the soup in.
To the pot toss in about 4 strips of bacon.
Bacon always adds flavor!
You will need about 7 Italian sausages for the soup.
Remove the casing from the sausages and tumble them in with the bacon.
Cook the sausage over medium-high heat until fully done.
This will take about 15 minutes and don't forget to stir.
Dice up one large onion.
Slice up a bunch of carrots. I like lots :)
Transfer the sausage to a plate. I don't line the plate with paper towel
because the extra fat adds flavor.
Remove the bacon completely. It was just there for flavor :)
Liquid Fall Gold (grease) Right Here!
Set all the sausage aside... but OK to have a few bites :)
Toss all the vegetables into the pot with the grease (Liquid Fall Gold) and cook
until carrots are tender but still have a bite (not mushy).
Spinkle in to taste...
Salt & Pepper
Rosemary
Oregano
Italian Seasoning
I like lots!!
Drain three cans of Cannellini beans.
Take one cup of the beans and smash them up
with a fork to help thicken the soup and give it a rustic texture.
You will need 2 cups of your favorite chicken broth.
Pour the broth into the Orange pot.
In go all the beans!
Bring the pot to a boil and then turn down the heat,
Grab that plate of sausage.
Tumble all the sausage in and stir.
Grab about 2 cups of spinach...I like lots (ya think?) :)
Stir in the spinach and let it wilt for a minute or two.
Just like this :)
Have a taste to see if you need a little more this or that.
I usually like more.
It tastes perfectly delish :)
Put the lid back on and keep the soup on low while you.....
...make a center piece and...
...set the table.
Time to eat this fabulous, delicious Fall soup.
Ladle up time!
This bowl just screams COZY to me.
Some parmesan cheese always adds a bit of flavor too.

If you have any leftover soup just pop it into the
refrigerator or freeze to enjoy later (but before Spring because its a Fall and Winter soup).
