This is one loaded Mexican Dip with all the fabulous spicy flavors.
If you are looking for some "inspo" for Cinco de Mayo,
this dip is perfect.

Ingredients!
Dice up one large onion.
Grab one...
Poblano Pepper
Jalapeno Pepper
Red Pepper
Dice all the peppers into tiny pieces.
Toss the peppers into a bowl with the onions and set it aside.
Heat a large skillet over med-high heat and drizzle with a bit
of olive oil. Add 1lb of ground beef and cook
3-4 minutes, crumbling as you cook.
Pull the skillet off the stove to add the rest of the ingredients.
Toss in the peppers & onions to the skillet.
Toss in a packet of your favorite Taco Seasoning.
Pour in a can of diced Rotel tomatoes with green chiles.
Sprinkle in 1 teaspoon of cornstarch and salt & pepper to taste.
Place the skillet back on the stove to cook for about 10 minutes.
Have a taste!
Pull the skillet off the stove and add about 1/4 cup
of shredded Mexican blend cheese.
Tumble in a small can of sliced black olives
and give the pot a good stir.
Grab a cute Chafing Dish that is oven safe.
Load the Chaffing Dish up with all the Taco meat
and top with more cheese.
Bake this dish in a 350 degree oven for about 20 minutes
till all the cheese is melted.
While the Taco Dip is cooking get some fun garnish
ready to place all over the top.
I say grab some chips and dip dip dip way!
