I know it's Spring when I start whipping up my
Belvedere Chopped Salad.
This crunchy rainbow salad has all the flavors, colors
and texture of Spring. All tossed with a
punchy lemon vinaigrette!
My Chopped Salad is so cool and refreshing that I make sure to
have plenty to enjoy through the week.
Just Delicious!
Let's get chopping!
Dice up some celery into small pieces with a colorful knife.
Dice up one yellow and one orange pepper with more colorful knives.
Dice up a cucumber with another colorful knife.
Dice up a red onion with a white knife (ran out of colors).
Toss all the vegetables into a clear bowl so you can enjoy all the colors.
Salt & Pepper to taste.
With a bright green spoon give the bowl a stir.
Add the juice of one lemon.
Pour in some great olive oil and stir.
Tumble in one can of drained Garbanzo Beans and give
the bowl a good mix.
Have a taste to see if you need anymore of anything :)
This is one of those times when flavors, colors and texture
come together in a huge way yummy way.
And with this Chopped Salad, life just feels right!
Grab the napkins, forks, bowls and salad then
head outside on a gorgeous day.
