I recently started making Red Pepper Jelly this summer because my garden was going
crazy in abundance with them. I made up a big batch to enjoy and share.
Green Peppers…
Red Pepper and yes I am a Girly Farmer.
Start by washing off about 5 peppers.
You will want to cut the tops off the peppers and remove stems, seeds and rib.
Slice them into strips and then dice them.
Once you have diced them place them into a food processor and pulse for about a minute
or until they are in small little pieces. Do them in stages if you can't fit
them all in your mini food processor.
In a large pot add 5 cups of sugar and two cups of vinegar. Place on medium heat.
Drain the peppers and tumble them into the pot with the sugar/vinegar.
Continue to stir the mixture on medium heat until it begins to boil.
Once the mixture has reached a vigorous boil you can add one package of pectin. Stir for another 10-15 minutes. When the mixture reaches 220 degrees remove from heat.
The fun part! Grab some mason jars because we Canning & Gifting.
And there you have it "Red Pepper Jelly so sweet and tangy!
Put a lid on it and decide where they will be going:)
But of course I saved some Red Pepper Jelly for the Herr's
Grab some cream cheese and butterfly crackers
and spread. YUM
Taste so good and love the color.
