Your Zucchini cravings will be satisfied with this Loaded Hasselback Zucchini. This
side dish is sure to impress and so easy to make.
Call me "Farmer Maureen". I grow Zucchini. :)
My crop is ripe. Will use my green pepper later.
Wash off the Zucchini and slice off each end.
Make some slices all the way down the Zucchini.
Drizzle with olive oil and Salt & Pepper.
Cover with foil and put into 375 degree oven for about 25 minutes till tender. May vary on time depending on the size your your Zucchini. Just check in with your oven a few times.
Slice up some your favorite cheese to insert into the Zucchini. I found
a Pepper Jack with Jalapeño and Tomato & Basil Jack Cheese.
Pull out your Zucchini when tender and alternate your cheeses into the little slots.
Pop your dish back into the over for about 5 minutes uncovered
just till your cheese gets all melted.
Garnish with some chives and serve.
Your mouth needs this! Really it does.
For sure use some of the melted cheese that oozed out for garnish too.
