This is one of my favorite sauces but I must start with a warning: it's incredibly
quick & simple to whip up and you will now have the pleasure of
enjoying several glasses "Wine" because you have the time.
Head straight to your garden or Farmers Market and grab 5-6 pounds of tomatoes. You will also need 1 medium head of garlic, 1/3 cup of olive oil, 1/2 cup basil, red pepper flakes and salt & pepper.
Chop up your garlic.
Place the sliced tomatoes on a large baking sheet with a raised 1-inch lip. Add garlic cloves
and drizzle with olive oil. Use you fingers to coat. Top with basil leaves.
Salt & Pepper to taste and a sprinkle of red pepper flakes.
Don't take alarm at those 3 large cloves of garlic on the baking sheet…I have other plans
for those three. Off to 250 degree oven for 3 1/2 hours or until
tomatoes are soft and bursting.
"Toast To The Tomato Roast"
Now go find your blender.
Allow to cool, then pour tomatoes into blender in batches.
Pulse 2-3 times then blend until desired chunkiness.
Pour your fabulous Roasted Tomato Sauce into some mason jars.
I wrapped a cloth towel on the top of this jar to look like a chef hat.
And off he went to a friends house for a fun surprise.

:) Add a cup of milk to the roasted tomatoes and you have a flavorful Tomato Soup.
:) Of course it's the base to a zesty Lasagna or short cut Lasagna Soup
:) Spread on french bread, top with mozzarella and any other topping for French Bread Pizza.
:) Nestle a few chunks of chicken breast and bake for 20 30 minutes for Chicken Tomato Bake.
Polena, Gnocchi, Ravioli. Need I say more?
The Roasted Tomato Sauce will refrigerate for 1 week or pop in the freezer for a few months.
