You may have not notice how much I love peaches…It's true we are in "Love"
A Farmers Market just opened in my town and I went to town
buying up my share of PEACHES. Lets Jam.
Grab about 12 ripe peaches.
Score the bottom of each peach with an X-shape just deep enough to cut skin.
Sumerge the peaches in simmering water for about 1 minute or until the skin slightly
pulls away. Really makes pealing easy.
Remove peaches from hot water and immediately plunge them in the iced water to cool.
This cooling method will prevent the peaches from becoming mushy.
So don't skip it :)
Just peal the skin away. Lovely.
Cut peeled peaches and remove pit and dice the peaches.
All cut up but first…
I need a little taste.
Grab some lemons and add 2 tablespoons of lemon juice to the cut up peaches.
Add in 1/4 teaspoon of salt.
Open one packet of pectin.
1/2 teaspoon butter to prevent foaming.
Yes 4 cups of sugar (did not say low cal jam).
Bring peach mixture to a rolling boil.
Mash peaches with a potato masher and stir continuously for about a minute.
Remove from heat and skim off any foam from the top of the jam.
Grab an assortment of glass jars and lets fill them.
Yum!
I will enjoy- now until Eternity.
You will enjoy Peach Jam until Eternity after you have a taste.
To be honest not all this jam is for me.

I packaged them up cute, right. Tonight we are the guest of some good friends wine
tasting event. Tomorrow we are spending the weekend at our another friends
home in Sonoma. They both deserve something home made.
