I love a good roast beef but sometimes you just want a change
from the typical version made with carrots and potatoes. I have the perfect
recipe that I think you will love. This Spicy Parsley Tomato Sauce
poured all over the beef is so good you may be temped eat it like a soup.
First get you oven preheated to 375 degrees.
Season (2 to 2 1/2-pound) sirloin tip or chuck beef roast with plenty of salt and pepper.
Season 4 Roma tomatos, cut in half with salt, pepper, and herbs de Provence.
Sear the beef over high heat on all sides in some olive oil. Turn off heat and place
seasoned tomatoes around the seared beef.
Pop the lid on and roast in the oven until meat thermometer
reads 130 degrees for medium rare, about 30 to 40 minutes. Take the roast out
of the oven, tent loosely with foil, and let rest for about 10 to 15 minutes
so the juices will redistribute. Now lets make the sauce.
Place 1 1/2 cups fresh flat-leaf parsley and two garlic cloves
in a food processor.
Add 1/2 teaspoon red paper flakes, 3/4 teaspoon salt.
3/4 ground pepper, 2 tablespoon red wine vinegar,
and pour in 1/2 cup extra-virgin olive oil.
Tumble in the lovely tomatoes that roasted in the meat juice
into the food processor and pulse.
Have a little taste with your finger, its yummy.
Now don't go get a spoon to eat it like a soup…It going on our roast beef!!
Well lets cut the roast beef and eat.
I think I turned a simple cut of meat into a
Super Special Meal :)
