I love that you get the taste of a pie with theses bars, but
don't actually have to roll out a pie dough.
Anyone who unreasonably hates to deal with rolling out perfect pie dough
will Love this recipe.
So heres to kicking off a warm up summer weekend in Belvedere Ca.
with Raspberry Oatmeal Bars.
Preheat the oven to 350 degrees. Coat 9-inch square baking dish with cooking spray.
Now sift together 1 1/4 cup of flour, 1tsp. ground cinnamon, 1/2 teaspoon baking soda,
and 1/4 tsp. salt in a large bowl.
Cream 1/2 cup (1stick) unsalted butter, softened with 1cup of brown sugar
until light and fluffy.
Beat in one egg and 1tsp. vanilla until smooth.
Add flour mixture to butter mixture; mix until combined.
Stir in 1 3/4 cups of old- fashion rolled oats.
Spread two-thirds of batter on bottom of prepared baking dish.
Now spread 1 cup of raspberry jam over the batter with a spoon.
Cover the batter evenly with the raspberry jam.
Stir in 1/4 cup of oats into the remaining batter.
Crumble the remaining batter over the top of the jam.
Bake 30 minutes, or until golden.
Yum, these Raspberry Oatmeal Bars smells absolutely
magnificent and they taste so delicious!
