Stuffed Baby Bell Peppers


These are just SCREAMING to be eaten, this recipe is unbeatable. I love the bite-size. It’s a perfect combination of sweet, spicy, and bright. What more could you ask for, except maybe MORE!


Get yourself some Beautiful & Bright bell peppers.


Heat oven to 400 degrees F. Cut bell peppers in half lengthwise; remove  seeds and membranes, but not stems. Place peppers cut-side up, on a baking sheet and drizzle with olive oil. Bake for about 10 minutes till peppers are soft. Remove from the oven to be stuffed with the spicy meet mixture.


In your skillet cook your ground beef over medium heat. Toss in your taco seasoning and salt and pepper, tumble in your frozen corn. Stuff your peppers with meet mixture and top with any shredded cheese of you choice ( Mexican Mix, Cheddar, Pepper Jack, Monetary Jack ). 
Place in the oven again about 10 minutes till cheese has melted completely. These little Stuffed Baby Bell Peppers have a strong personality and I guarantee you they will disappear at your next Party… Invite me!
Ingredients
1 pound of ground beef
15 baby sweet bell peppers
1/2 cup of frozen corn
One packet of Taco Spices & Seasonings ( I used Lawry’s Taco Seasoning )
salt and pepper to taste
shredded cheese of your choice
Enjoy
