This Chile would be fabulous for your Cinco De Mayo celebration. You could serve this chile as a first course or your main event.
Heat the oil in a large sauce pan over medium heat and sauté your onion till tender. Toss in your green chiles. Add your garlic and cumin and cook until fragrant, about 5-7 minutes.
Add your broth, salsa verde.
Add you chicken & beans and then sprinkle in your oregano & cumin. Bring to a boil, reduce heat and simmer for about 10 -15 minutes.
Its Fiesta time! Get yourself a Margarita and sever yourself up a bowl of White Chicken Chile.
Ingredients
1tbs. oil
1 onion
1 4oz diced gren chiles (hot)
3 cloves diced garlic
1 tsp. cumin
3 cups chicken broth
1 cup salsa verde
1lb cooked chicken shredded or diced. I used a roast chicken.
1 15oz can Cannellini beans
1/2 tsp oregano
salt & pepper to taste.
Top with Cilantro & Avocado.
