Summertime baking means summer fruit.
Red cherries and ripe berries are fabulous for baking but the real
summertime show stoppers are sweet juicy peaches.
They are delicious in so many ways.
So lets celebrate Peach Season with...
Peach Oatmeal Bars!
In a large bowl add in 1 cup of rolled oats.
Toss in 1 cup of all-purpose flour to the bowl.
Add in 3/4 cup of granulated sugar.
Sprinkle in 1 teaspoon of cinnamon.
Add in 1/4 teaspoon of salt.
Pour in 2/3 cup of melted and cooled unsalted butter.
Give the bowl a good mix and set aside.
Peel and chop up two juicy ripe peaches.
Tumble all the peaches into a small bowl.
To the peaches add in 2 tablespoons of sugar.
Sprinkle in 2 teaspoons of cornstarch into the bowl.
Squeeze in a teaspoon of fresh lemon juice.
Pour into the peaches 1 teaspoon of vanilla extract.
Give the bowl a mix.
Place 2/3 of the oatmeal mixture onto an oven-proof dish that
is lined with parchment paper. Use your hands or a spoon to spread the
mixture evenly. Pour the peaches all over the top.
Cover the crust with the peach mixture.
Sprinkle the remaining dough over the peaches. Use your fingers
to press the crumbles so they stick to the peaches.
Bake for 33-35 minutes in a 350 degree oven until the top is golden brown.
While the Peach Oatmeal Bars are baking, heat up some chopped
peaches with a tablespoon of sugar.
Pour the peaches into a mason jar to cool. These lovely peaches
will be the sweet garnish for the Peach Oatmeal Bars.
Keep the bars in refrigerator for at least one hour before cutting

Now ready to remove from the pan!
Just start slicing into squares.
