Pimento Cheese Cookies are coming in by the truck loads because
everyone loves cheese & crackers, so why not
combine the two into a rich, cheesy
tender biscuit!
Top it off with some Apricot preserves!
This recipe will make your holiday a Bite Better :)
The star of the show is Pimiento Cheese!
I bought my Pimiento Cheese at my favorite deli but if you don't
have a place to buy it it's so simple to whip up.
3 oz. soft cream cheese
1c. shredded Monterey Jack Cheese
3 T. finely chopped pimento
1/2 c. mayo
Dash of cayenne pepper
Dash of Worcestershire sauce
Dash of hot sauce .
Add 1 cup of Pimiento cheese to a bowl.
Toss into the bowl 1 cup of flour.
Pour in 1/4 cup of melted butter.
Beat the mixture till well blended.
Scrap the blades well back into the bowl.
Okay have a taste!
Tumble in 1/2 cup pecans, finely chopped.
Fold all the mixture together.
Cover the cheese and chill for at least 2 hours.
You can even bake the cookies.

I made a second batch, yes I did.
Things go better in pairs, two in the fridge now:)
Line a cookie sheet with parchment paper and grab one dough.
Place dough on a well-floured surface, and roll to 1/8 inch thickness.
Cut about 48 rounds with a 2 inch round cutter.
Keep going with the cutter.
Place the rounds about 2-inches apart and sprinkle
with a little sea salt over the top.
Scrape up the the scapes and re-roll the dough for more cookies.
Few more rounds from the last of the dough.
Yah, no more cookies from what's left :)
Off to a 400 degree oven for 12 to 15 minutes or until golden brown.

Pimiento Cheese cookies taste great on their own but
are even better with a dollop of Apricot or Strawberry preserves.
