I never made it to the Mediterranean this summer
but I did bring the Mediterranean to my kitchen!
This easy Mediterranean Dip can be served with garlic bread
or as a tasty topper to any protein like fish and chicken.
Are you ready to rock your taste buds because this is so delicious and
just filled with so many flavors and textures!
Let's start and pretend we are in the Mediterranean!
Slice up a bunch of cheery tomatoes into a baking
dish and add some pieces of garlic.
Drizzle in some olive oil and top the dish with a sprig of Rosemary.
Into a 350 degree oven.
Bake the tomatoes for about 30 minutes or till they burst.
Your kitchen will smell AMAZING!
While the tomatoes are baking, slice up some
bread for dipping. Paint them all over with some olive oil.
Rub the bread slices with some garlic over the top.
Bake in the oven till golden brown. Keep a close eye on them
because they toast up fast.

Chop up as many olives as you like to go into the dip.
Rinse and drain one can of Cannellini beans.
Grab some basil and rosemary.
Tomatoes are done. Pull out the garlic and rosemary sprigs from the dish.
Tumble all the Cannellini beans into the hot tomatoes.
With a fork smash up some of the beans but leave some of them whole :)
Add in all the olives and a pinch of salt to taste.
Sprinkle with some basil and have a taste.
Garnish with a fresh Rosemary sprig.
