Hot summer days call for quick and easy recipes and this chopped
Cold Dill Shrimp Salad is light and delicious on top of Butter Lettuce for sure!
There are so many ways to serve this simple refreshing salad.
To start you will need about 2 lb of baby shrimp. I was a lucky
gal because my market sells already cooked cold baby shrimp
so I didn't even have to turn on the stove top
on a SCREAMING HOT DAY!
This is all you will need to whip up this yummy salad!
Toss all the shrimp into a large bowl.
Dice up a bunch of celery into small pieces.
Celery into the bowl.
Chop up one red onion.
Toss the red onion into the bowl and give it a stir.
Add in about a cup of mayonnaise.
About 2 tablespoons Dijon mustard.
Give the bowl a good mix.
Add the juice of one lemon for that summer kick :)
Salt and Pepper to taste. I love my Pepper :)
Grab some fresh Dill because a lot is going in.
