GUINNESS IRISH STEW

 


St. Patricks Day doesn't mean just serving up corn beef. 
This Guinness Irish Stew is a great alternative with an incredibly rich, thick broth.

Beef or Lamb gets layered with flavors due to a slow braise in Guinness beer,
 vegetables and herbs. Plus it's all made in just one pot.
So Yummy!


This is a pretty simple dish so lets get some Irish cooking going :)


Grab a 2 lb beef chuck and cut into about 2 inch chunks.


Perfect, now just set the bowl aside.


Dice up one large onion.


Slice up 4 peeled carrots into 1/2 inch pieces.


Dice up 2 peeled Irish Potatoes.


Slice up 3 leeks but only the white stalks. I can't tell you what
great flavor leeks add to the stew!


Dice up 3 garlic cloves.


Now it's time to COOK....


In a large Pink Dutch Oven heat 2 tablespoons olive oil over high heat.


Toss the beef cubes into the pot.


Brown the beef well on all sides.


Remove the meat to a bowl and set it aside.


Lower the heat to medium and add a bit more olive oil. Toss in the 
leeks and onions. Cook for about 3 minutes.


Stir in 3 tablespoons of flour to the pot.


Add some salt, pepper and the garlic.


Tumble in all the vegetables and cook for 3 more minutes.


Yes open up 2 bottles of Guinness Beer. 
Not for drinking, for the stew :)


Pour in the Guinness.


Pour in 2 cups of beef broth.


Toss into the stew a few sprigs of thyme.


And now the beef goes in :)


If the beef and vegetables are not fully covered add enough water to do so.


Bring to a boil, stir and lower heat. Simmer for 30 minutes.


Now to make your Irish Centerpiece... Grab a large cabbage.


Remove the center of the cabbage to make a cavity.
Save the cabbage leaves to dip in
The Guinness Irish Stew.


Fill the cabbage with some orange flowers. 
Don't forget the empty Guinness Beer bottles too :)


Set the table, grab some Shamrocks because it's time for some delicious
Guinness Irish Stew.


Ladle up this Irish Stew into a green pot for serving.


Little Shamrock for garnish on the Irish Stew :)
