Lemon bars are so simple to make and I am sure you have made them before.
My daughter Claire and her girlfriend Kelly are busy working girls
in San Francisco. They were planning on going to
The Pop Up Dinner "Le Dinner Blanc SF'". They had a fabulous
menu all organized for the all white picnic event, including lemon bars.
I asked them if they would like me to make the lemon bars they said...
We Would LOVE it. So I did.
Preheat the oven to 350 degrees. For my crust I creamed the butter
and sugar until light with my mixer.
I combined my flour and salt then dropped it into my sugar mixture.
With mixer on low combine my dry and wet ingredients well.
Press my dough into a 13 by 2-inch baking sheet.
Now that my dough is pressed well, baked for 15 to 20 minutes,
until lightly browned. Let cool and leave the oven on.
For the filling I with squeezing my lemons about a cup of juice.
Drop in 6 eggs into a large bowl.
Whisk together the eggs, sugar and lemon juice.
Add a tablespoon of lemon zest.
Poured my lush lemon goodness over the crust
and bake for 30 to 25 minutes.
How fabulous does this look? Cut into whatever size you like.
I choose to make small size bites so they would fit into
my white tin can.
Since these lemon bars were traveling to a Evening Picnic
a sheet of parchment paper would help keep the bars from sticking together.
Almost ready to go.

INGREDIENTS
FOR CRUST
1/2 pound of unsalted butter
1/2 cup granulated sugar
2 cups of flour
1/8 teaspoon kosher salt
FOR THE FILLING
6 extra- large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6)
1 cup freshly squeezed lemon juice
1 cup flour
