CHOCOLATE CHIP COOKIE CHEESECAKE BARS


These bar cookies are Divine. I mean seriously, how can you turn down
cheesecake sandwiched between two chewy, soft
layers of chocolate chip cookies?


My flour, baking soda and salt.


I creamed my white and brown sugar with butter …Yup had a taste :)


Tumbled in two eggs and some vanilla extract.


Mixed dry ingredients with wet ingredients…Maybe I another taste?


I got my dough pressed into my prepared pan. Evenly right?


Topped with a cup of chocolate chips. Hmmm maybe a bit more.


I really enjoyed theses two ;)


My cheesescake filling is super easy. Just mix cream cheese, sour cream and one egg.


Pour cheesecake batter over the chocolate chips.


It really helps if you do small droplets over the batter so it spreads evenly.


One more layer after this. :)


Mix 1/2 cup of chocolate chips into remaining cookie dough.


Spread dough mixture over the cheesecake and off to the oven

INGREDIENTS

2 1/4 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
12 tablespoons butter, melted
1 cup granulated sugar
1 cup brown sugar
2 eggs, lightly beaten
2 teaspoons vanilla extract
1 1/2 cups semi-sweet chocolate chips, divided, plus more if desired

CHEESECAKE LAYER

8 oz cream cheese. soften
1/4 cup sour cream
1 egg slightly beaten
1/4 cup powdered sugar
1 teaspoon vanilla extract

1. Preheat oven to 325 degrees
2. line an 8x8 pan with greased parchment paper. Set aside.
3. In a large bowl cream together butter and sugar
4. in a medium bowl whisk together flour, baking soda, and salt. Set aside
5. Stir in eggs and vanilla extract.
6. Mix dry ingredients with wet ingredients just until a soft dough forms and flour is incorporated.
7. Press half of dough into the prepared pan in an even layer.
8. Cover with 1 cup of chocolate chips (can use more or less)
9.Prepare the cheesecake batter by mixing together the cream cheese, sour cream, egg, powdered sugar and vanilla extract into a large bowl until creamy.
10. Pour cheesecake batter over chocolate chips and spread evenly.
11. Mix 1/2 cup chocolate chips into remaining cookie dough.
12. Drop remaining dough over cheesecake layer until completely covered.
13. Sprinkle on more chocolate chips if desired.
14. Bake for 35-40 minutes or until center of cookie is set and golden brown.
15. Allow bars to cool in pan and refrigerate for at least 3 hours.
16. Slice into bars and serve cold or room temperature.
17. Store in refrigerator.


The texture of the creamy cheesecake layer and cookie layers are just
perfect together! Your teeth just sinks right in! These cookies are
magical, rich and addicting. Make a batch and share them.  My husband
and I were going to a dinner party and what a great hostess gift they made.
