SUMMER TIME SUCCOTASH


Succotash is simply a mix of fresh vegetables 
and makes for a fabulous side dish.
There are many variations and the most common 
two ingredients are corn & lima beans.
Do you see a lima bean here? My husband "Hates" lima beams!
I have a fabulous twist on Succotash 
that you will love and yes you do see blue berries :)


Using fresh picked vegetables from the garden or the 
farmers market give the best flavor.


Saute your corn, onions, and green beens.


Add in the blueberries, which really gives the corn something to play with.
Toss in fresh basil, roasted pine nuts, red chile flakes and salt and pepper.


Mix in a light vinegette dressing.


You will absolutely love the nutty flavor the pine nuts bring
and the sweet pop of the blueberries  to 
this Summer Time Succotash.
It's such a versatile dish served warm or cold.

INGREDIENTS

1/2 cups pine nuts
1/4 pound gren beans
1 spring onion
2 cups fresh corn
1/2 teaspoon crushed hot red chile flakes
1/2 cup basil leaves
1 pint blueberries
salt and pepper to taste

Vingaret Dressing

1/4 cup extra virgin olive oil
2 tablespoon white wine vinegar

Enjoy!
