STRAWBERRY-LEMON-BUTTERMILK ICEBOX PIE


"If love is a CASSEROLE, which I believe is, then an 
ICEBOX DESSERT is the fist kiss."
Icebox pie has come back in vogue!!!


Three egg yolks tumbled into my bowl.


Beating my egg yolks with handheld mixer.


Gradually whisk in my sweetened condensed milk.


1/2 cup os strawberry jam into my mixture.


Lemon zest and buttermilk get whisked in.


For the pie crust mix 1 1/2 cups crushed graham crackers and pour in melted butter.


Add the sugar.


Press graham cracker mixture into the bottom, up sides into a pie pan and
pop into the oven for 8 to 10 minutes at 325 degrees.


Pull the pie crust out and pour the mixture in. 
Bake at 325 degrees for 20 to 25 minutes.


Pie is done so rest it on a wire rack.


Stir 16 oz sliced strawberries into 3 table spoons of heat strawberry jam.


Give a stir.

From the satiny sheen of the filling to the mounds of whip cream
or fresh fruit piled on top, there is so much
beauty in an Icebox pie.

INGREDIENTS

PIE CRUST

1 1/2 cup crushed graham crackers
1/4 cup sugar
1 tsp kosher salt
6 Tbsp. butter melted
Process crushed cookies, sugar and salt in a food processor until well combined. add melted butter, and process until thoroughly combined. Press on the bottom, up sides, and onto lip of a lightly greased 9 inch pie plate. Bake pie crust in a preheated oven to 325 degrees for 8 to 10 minutes or until lightly browned


PIE FILLING

1 (14-oz) can sweetened condensed milk
1 Tbsp. loosely packed lemon zest
1/2 cup fresh lemon juice
3 large eggs
1/4 cup buttermilk
1/2 cup and 3Tbsp. strawberry jam
16 oz. sliced strawberries
1. Preheat oven to 325. Whisk together the first three ingredients in a bowl. Add 3 Tbsp. strawberry jam to the mixture.
2. Beat egg yolks with handheld mixer in a medium bowl at high speed 4 to 5 minutes or until yolks become pale and ribbons form on surface of mixture when beater is lifted. Gradually whisk in sweetened condensed milk mixture and whisk until thoroughly combined; whisk in buttermilk. Pour mixture into prepared crust.
3. Bake at 325 degrees for 20 to 25 minutes or until set around edges. Cool on a wire rack 1 hour. Cover lightly with plastic wrap, and freeze 4 to 6 hours.

The icebox pies are a busy person's best friend. Whisk up
a bowl of nearly instant filing, pour into a foolproof crumb crust
and pop it in the freezer.

P.S. Can't give you a taste this time because this Icebox Pie is going
across the street to my girlfriend's house for her birthday:)
