Here is a great way to cook a whole meal outdoors. Make cornbread in
a cast iron skillet right on the grill, alongside your meal.
Wisk together cornmeal, flour, baking powder, salt,
and one beaten egg.
Pour in your buttermilk and dollop in the sour cream
Love my cast iron skillet. Pour in a good bit of melted butter.
This is where you can get CREATIVE. Add what you love.
I add whole corn and cheddar cheese. YUM.
Not done yet. Why not some diced green chiles :)
Mix all your ingredients together in the skillet and
head outside to the grill. The cornbread will cook about 25 to 30 minutes.
Just keep an eye on it.
Just before the bread is done I ran inside and added
a little more butter and cheese on top and took it back to the grill to melt.
Yes… this is " Decadent " and sometimes you just have to be:)

INGREDIENTS
1 cup yellow cornmeal
1 cup all- purpose flour
1 tablespoon baking powder
1 1/2 teaspoon salt
1 cup buttermilk
1/3 cup vegetable oil
1 extra large egg
1/4 cup melted butter for heating the skillet
1/2 cup corn
1/2 shredded cheese and extra for topping
1/2 cup diced green chiles
Now, don't skip the honey-butter topping- slather it on.

There are some really great box cornbread mixes out there, go for it.
Just make it in your cast iron skillet outside.
