Homemade ice cream can be a pain in the neck, what with the bowl
freezing and custard-cooking, but
Popsicles? You have NO excuse not to make Popsicles.
Just buy a mold pour in various liquids or fruits that taste good
and wait for the magic to happen:
Picked some basil from my yard.
Got my fresh raspberries and molds out.
Puree four cups of raspberries in my food processor.
Combined my simple syrup with basil leaves in a small saucepan.
Simple syrup is just equal parts of sugar and water.
2/3 cup sugar and 2/3 cup water
Strain out basil and discard. Combine the basil-scented simple syrup
with the pureed raspberries in a bowl.
Pour the mixture into your pop molds, leaving
a little bit of room at the top for the mixture to expand.
All filled :)
Insert the lids and freeze until solid about 4 to 5 hours.
Think I am ready for a Popsicle!
What can be better than a cold Popsicle after
a workout. So good!

INGREDIENTS
1 1/3 cups of simple syrup
3 sprigs fresh basil
4 cups raspberries
Here is your Popsicle. I don't want to eat alone :)
