CHERRY CREAM CHEESE COFFEE CAKE


Oh my heavens... sometimes we need sweets in the morning.
Actually I did have a reason to make this yummy
coffee cake this past week. We had a house 
guest and this coffee cake was perfect.


Sugar and cold butter into the bowl.


Cut flour, butter, sugar until crumble and reserve 3/4 cup of crumb mixture.


Just added my baking powder, baking soda. and salt to the remaining crumb mixture.
Add your egg, sour cream and almond extract. 
Stir till blended well.


For the filling, in a separate bowl beat your cream cheese and sugar.


Add your egg and beat till combine. My crumb mixture is pressed
into a springform pan and ready to fill.


The springform pan is now layered with the crust, cream cheese
bright red cherries and topped with the reserve
crumb mixture and a sprinkle with almonds…
Off to the oven. Can't wait till its DONE!

INGREDIENTS

2-1/4 cups all-purpose flour
3/4 cup sugar
3/4 cup cold butter
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup sour cream
1 teaspoon almond extract

FILLING

1 package (8 ounce) cream cheese, softened
1/4 cup sugar, 
1 egg, lightly beaten
1 can (21ounce) cherry pie filing
1/2 cup slivered almonds

In a large bowl, combine flour and sugar. Cut in butter until crumbly. Reserve 3/4
 cup crumb mixture. Add the baking powder, baking soda and salt to the remaining crumbly mixture. Stir in the egg, sour cream and almond extract until blended. Press onto the bottom and 1.in up the sides  of an ungreased 9-in, springform pan with removable bottom.

For the filling, in a large bowl, beat cream cheese and sugar for one minute, Add egg; beat just until combined. Spread over crust. Carefully top with cherry pie filling. Sprinkle with almond and
 reserved crumb mixture.

Bake at 350 degrees for 50 to 60 minutes until center is set.
Cool on a wire rack. Carefully run a knife around edge of pan to loosen; remove sides of pan.
Store in refrigerator before eating to make sure the coffee cake is set.
It will be hard to control yourself.
