I always have bags of frozen sweet peas in my freezer because I am the only one in my house who loves them! After recognizing that I had 4 bags left, It was time to make something delicious with them. I decided to whip up a Sweet Pea Soup for a light lunch for a few girlfriends who share the love for green peas.
Bring some spring green delicacy to your table!
Lets Get Cooking.
1. Wash and cut the scallions into slices. Heat olive oil in a sauce pan over medium heat.
2. Add scallions and peas to the pot and saute for about 7 minutes, until peas are soft.
3. Add 1 tbs parmesan cheese and fold in. Take about 4tbsp of the mixture and set it aside in a bowl.
4. Add vegetable broth, the half & half and parmesan to the peas and bring to boil. Cook another 5 minutes.
5. Take off the heat and blend the mixture in a blender until the soup is very smooth. Be careful of the splashes ( i had a cute apron on ) as the soup is very hot.
6. Serve hot soup in bowl. Sprinkle some pea-parmesan mixture and the chile flakes and enjoy it.
Ingredients
2 cups frozen peas
3 scallions
2 tbsp olive oil
2 cups vegetable broth
2/4 cup half & half
4 tbsp grated parmesan
1tsp chile flakes
