This is a perfect example that there is a Fiesta going on at my house tonight. It’s Cinco de Mayor and I am entertaining friends to who have a great love for Mexico like I do.
These parfaits have a scrumptious taste of Key Lime Pie and I am loving the presentation this way. A refreshing and delicious dessert and so very little fuss. We are going to drizzle a little Tequila over the top of the parfait because… Why Not:)
My Graham Cracker Crumbs.
Oh yaaaa my lime juice & sweeten condensed milk looks amazing!
Whip cream going in. It just gets better right.
Off to the refrigerator to set while I lick the bowls.
Lets get cooking.
Melt butter in a heavy small skillet over medium heat. Mix in brown sugar and stir until bubbling, about 1 minute or less. mix in crumbs; stir until color deepens, about 3 minutes. Turn out onto a plate to cool. To make the Key Lime cream, stir condensed milk, lime juice and lime peel in a large bowl to blend ( mixture will thicken ). Set aside while you make sweetened whipped cream. Go ahead and stick your finger in for a taste but only ONCE!
For whipping cream topping, beat 2 cups whipping cream until stiff peaks start to form. Add 1/4 cup powder sugar and 1 teaspoon vanilla.
Fold 1 cup of whipping cream into Key Lime cream mixture. Save the remaining whipping cream for topping the parfaits.
Place the crumble mixture at the bottom of your parfaits bowl, then the Key Lime mixture. Sprinkle grated lime peel on top. Refrigerate at least 1 hour. Top with a generous dollop of whipping cream. Fiesta Time!
Ingredients
Graham Cracker Crumble
3 tablespoons unsalted butter
2 tablespoons white sugar
1 tablespoons light brown sugar
1/2 cup graham cracker
Key Lime Cream
1 14- ounce can sweetened condensed milk
1/2 cup fresh lime juice
1 tablespoon grated lime peel
Fold one cup of the sweetened whipped cream from the recipe below.
Sweetened Whipped Cream
2 cups chilled whipping
1/4 cup powdered sugar
Pure Vanilla Extract
