The Farmer’s Market at The Marin Country Mart in Larkspur Ca. Inspires me every time I go. I absolutely love picking up all kinds of beautiful fruits and vegetables, so fresh. This recipe for a gratin I am telling you could almost make me become a vegetarian! Slow down Maureen you love you meat too.
Lets get started.
Grab yourself a nice size dish to start layering all your vegetables. You can make your Gratin what ever size works for you. We had a few people over for dinner this past weekend and I severed this Gratin as a side dish to our Flank Steak.
First layer; Sweet Vadalia onion ring slices on a nice drizzle of olive oil.
Sliced zucchini.
Handfull of romano cheese spread all over.
Toasted homemade Italian bread crumbs spread about.
Small cherry tomatoes placed all around.
I had some cut leeks I needed to use so I threw them in, glad I did!
Drizzle with olive oil.
More cheese.
More breadcrumbs.
Repeat!
Garnish with fresh snipped basil.
Place in hot oven at 425 till tender and crispy and the tomatoes pop and get caramelized. This is so easy you can’t messed it up. Some people like their vegetables well done and others prefer al dente .
