Hey Sugar, This is a "Slap Your Mama" Delicious
Southern Casserole!
This recipe is packed with Zucchini, Squash and Cheese then
topped with a crispy buttery crust.
A Southern Casserole is perfect as a Side Dish or your Main Dish.
Whether you're a born and raised Southerner or just love good
eats, this casserole is sure to become a Favorite.
If you want to get fancy you could also call this dish...
Zucchini and Squash Gratin :)
To get started on this casserole Truck in a combo of
Squash & Zucchini from your Farmers Market.
This recipe is one of my favorites so lets get our Southern on.
Start cutting up about 3 pounds of yellow Squash
and 2 pounds of Zucchini into 1/8 inch thick slices.
Toss 1/2 of the vegetables into a large
pot with a pat of butter.
Place the pot on medium heat stirring occasionally
for about 10 minutes then transfer to
a colander to drain.
Repeat with the second half of the vegetables.
Load them all in with the butter again.
While the Zucchini and Squash are draining
saute up one yellow onion in butter until translucent.
For the Cheesy Creamy part of this Southern Casserole
grab an extra large bowl.
Crack two eggs into the bowl.
Tumble in 8oz of Sour Cream.
This little bit of Sour Cream is for me to lick :)
Tumble in 1/3 cup of Mayonnaise to the bowl.
Give the bowl a good whisking.
Tumble 4 oz of sharp white Cheddar Cheese
and 1 minced clove of garlic into the bowl.
Add in some Salt & Pepper and give the bowl a gentle stir.
Chop up some fresh flat leaf Parsley.
Toss in the Parsley and a bit of chopped Thyme.
Give the bowl a stir stir stir.
Y'all it's time for the Zucchini & Squash.
Gently fold in the Zucchini & Squash because lord
knows Sugar ya don't want to break them up.
Add in all the sweet onions next and mix mix mix.
Grab a casserole dish and Butter it up like your
Butter'n your Southern Biscuit :)
We are not done yet because we
have a delicious topping to whip up.
Melt 2 tablespoons of butter on the stove.
Grab the Ritz Butter Crackers and crumble up
about 16 of them into small pieces.
Toss the Ritz into the melted Butter.
Get all the Ritz Crackers coated with the Butter.
Top the casserole with more Pepper because
Sugar I LOVE Pepper!
Top the casserole with some Southern Love.
Sprinkle all the Ritz over the top.
Now truck this Southern Casserole over to a 350 degree
oven for about 1 hour.
You want this dish bubbling and the topping golden.
This just smells AMAZING!
Dress this Zucchini and Squash up with some Parsley
because you know the Southerner's fancy
