Betty the Baker showed me how to make her
" Baby Blueberry Muffins".
These muffins are so moist and delicious and just bursting
with lots of juicy Blueberries.
This recipe is so easy even a child can show you
how to whip them up like my granddaughter
Betty did.
Do You Know " The "Muffin Man" ? Well I do and it's not a man.
It's a little girl named Betty....who lives on Blueberry Lane :)
In a bowl whisk together...
2 cups of Flour
1 1/2 teaspoons of Baking Powder
1/2 teaspoon of salt
In another bowl add in...
1/2 cup of softened Butter
1 cup of Sugar
2 large Eggs
2 teaspoons of vanilla
1/2 cup of milk
"That's right Mamie"..says Betty
Beat the bowl on medium speed
until light and fluffy.
Pour the dry ingredients into the wet mixture and stir well
Let's have a taste.
MMMMMM.....
Tumble in two cups of frozen Blueberries that have
thawed and drained into the bowl and mix.
Betty says frozen Blueberries make for better
tasting muffins and they will keep that deep
blue color better after they bake.
Look at all those Blueberries!
Line your mini muffin pan with mini cupcake papers.
Use a cookie scope to put the mixture into the muffin pan.
Betty said "I guess I will have another taste" :)
Now off to a 350 degree oven for 10 to 13 minutes until
a toothpick inserted in the center comes out clean.
I will put them in the hot oven for Betty and set the timer.
Betty's Baby Blueberry Muffins are
bursting with Blueberries and Smell
AMAZING!
When the muffins cool just a bit place them on a pretty platter.
My adorable granddaughter the Baking Chef"
is going in for her first muffin now.
Betty is sneaking a second muffin and she thinks
no one is watching LOL.
Make a batch of these Betty Baby Blueberry Muffins to enjoy
now and some to freeze and enjoy later.
Trust me this is a recipe to keep because it's a perfect
sweet flavor that is BURSTING with
Blueberries.
