CILANTRO LIME CHICKEN

 


Attention all Cilantro lovers- this Cilantro Lime Chicken recipe is for you!
It is made with fresh lime juice, chopped cilantro and a few spices.
It's absolutely " Finger Licking Good " ....but use a fork.

Go get Grilling & Chilling because it is Hot Hot Hot every
where and it's the first day of Summer!


The truck just pulled up with the marinating ingredients now.


For the marinatade...

2 teaspoons chile powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 teaspoon of salt
1/2 teaspoon of pepper
1/4 cup of olive oil
1/4 cup of fresh lime juice
1 tablespoon of the zest of a lime


Add in 2 teaspoons of minced garlic to the bowl.


One of the stars of the recipe is Cilantro!

Dice up 1/4 cup of fresh Cilantro leaves.


Tumble in the Cilantro to the party marinade.


Give the Cilantro Lime Marinade a good whisking.


In a shallow dish add about 6 or 7 bone-in chicken thighs.


Pour all the marinade over the chicken and mix well
so that all the chicken thighs get the Love!


Refrigerate the marinated chicken for a minimum of 30 minutes.
You can also do this for up to 12 hours.


While the chicken is marinating make some Tortilla Cactuses.


Time for Grilling & Chilling!

Preheat your gas grill. Lightly oil the grill grates to prevent
the chicken from sticking and this really helps.


Grill the chicken for about 8-10 minutes on each side. Brush
on more marinade as it cooks.

Remember you want a good color on the chicken and 
everyone's grill cooks different.

Get the table setting out because it's almost that time!


Chilling & Grilling is done so grab the chicken now!

These chicken thighs were on the grill for 30 mins at a medium heat and grill temp of 300 dgrees.


Garnish the chicken with some Cilantro & Limes which is why it's called

Grilled Cilantro & Lime Chicken 


I served my Cilantro Lime Chicken with a cold corn salad
and my cute Tortilla Cactuses.

Do not forget a nice cold MARGARITA!
