BERRY BANANA BREAD

 


What could be better than the aroma of freshly baked Banana Bread in
in your kitchen. This moist and delicious Banana Bread is
easy to make and a great recipe to use up those
left over Bananas that you have.

One of the great things about  making Banana Bread is its versatility.
You can add all kinds of Berries, Nuts or Chocolate Chips.
Just about anything you LOVE :)


Here's the play-by-play. Gather your ingredients.


In a large bowl add in 1 1/2 cups of soft butter and 2 cups of sugar.
With a mixer cream the butter and sugar until light & fluffy.


Perfect Light & Fluffy.


Meanwhile in a separate bowl, whisk together 

3 cups of flour
1 tsp. of salt
1 tsp of baking soda


Grab about 8 Bananas. Yes, it sounds like a lot but it is...

Banana Bread :)


Mash those Bananas up with a fork.


To the Bananas pour in 2 tsp of vanilla and mix in the bowl.


With the mixer on low add in 4 eggs to the Bananas one 
at a time, beating after each addition.


Pour in the flour mixture in two additions, and 
mix until just combined.

Why you ask do you do this step in two additions?
So you don'ts get flour all over your 
FACE :)


Mix Mix Mix Away!


I am going with the berries I have in my fridge for this Banana Bread.

Slice up a bunch of Raspberries into small pieces.


Wow this looks Pretty.

Tumble the Raspberries into batter.


With a spatula give the bowl a stir.


Toss in a bunch of Blueberries to the bowl and stir.


Because this is called Berry Banana Bread I am throwing
in a bunch more berries and now it's called..

Very Berry Banana Bread.


Butter up well two 8.5 x 4-5 inch loaf pans.


Divide the batter between the two prepared pans.

Off to a 350 degree oven for about 1 hour. 
Every oven cooks differently.


My timer is set.


While the bread is cooking I will enjoy 
licking all of this!


One hour is up so I did the Toothpick check....not done

Back into the oven for 15 more minutes.


My Banana Bread is done and I wish you could
smell my kitchen right now!


While the bread is still hot smear the top with
MORE BUTTER...


Let The Berry Banana Bread completely cool before
removing from the pan or you will have a
MESS!

I started with the Butter on my slice first.


A few slices to enjoy through the day or a midnight snack.


This Banana Bread freezes Great. 

We have house guests coming next week and I will
be breakfast ready for them :)


To freeze be sure to let the bread cool completely. Wrap in foil
and tuck into an airtight bag. Freeze up to 3 months.

Thaw overnight at room temperature.


Well I had two Bananas left so...

Banana Peanut Butter Sandwiches!
