IRISH GUINNESS BEEF STEW

 


You just won a "Pot Of Gold" if a few bottles of Guinness Beer fall
from a Rainbow with a few puff pastry Shamrocks into your 
Irish Beef Stew!

I call that "The Luck Of The Irish" :)

Irish Beef Stew is one of those awesome, no-fuss meals that somehow tastes
incredible. It is super cozy and packed with tender beef, potatoes,
carrots, tomato paste, smoky bacon and mushrooms.

They all simmer together in a rich, aromatic broth jazzed up with
some Guinness Beer that was over poured into the stew by a...

...Naughty Leprechaun!

It's St. Patricks Day, So Drink And Cook With Beer!


So Leprechauns, before cooking get some Green on in the kitchen

with a centerpiece of Cabbage & Roses


Let's get Irish at least for a day Paddy!


Add 4 slices of thick cut bacon to a large Dutch oven
and set it over medium heat to cook.


Cut up about 3 lb of boneless beef chuck into 2-inch cubes.


Remove the bacon and set it aside. Tumble in half of the
beef to cook in batches on the stove.

Do a little Shamrock shake with some salt, pepper and all spice.


Little drizzle of olive oil.


Put the beef onto the stove and sear it till it is a nice brown color.


My Irish eyes see that my beef is totally doing

Remove the beef and sear up the second batch.


Toss in one diced onion with a wee bit of olive oil
and several chopped garlic cloves.


Saute the onions for about 2 minutes.


With the "Luck Of The Irish" I had a larger pot to
transfer my stew to. My first pot was too SMALL :)

Toss in and give a good stir

4 sliced carrots
4 stalks of sliced celery
1 lb of yukon gold mini potatoes peeled and cut in cubes
1 lb of button mushrooms, halved


Give the pot a Shamrock shake with 3 tablespoons of 
flour and another good mix.


Into the pot of gold goes 1/4 cup of tomato paste.


For Instant Irish Just Add Beer :)


Pour in 12 ounces of Guinness Beer but 
old Paddy Clover said "maybe just a wee bit more"!


All the beef goes into the pot with 4 cups of Beef Broth.


Three lucky bay leaves and the bacon go into the pot 
and then off to the stove top to cook.


Bring this pot to a rolling Irish Jig boil, then 
reduce heat to a simmer. Cover and cook for 1-1/2 hours.


While the Irish Beef Stew is cooking let's make some
Lucky Puff Pastry Shamrocks.


With a package of frozen puff pastry dough just 
roll it and cut away lots of Shamrocks.


Little egg wash over the top and off to a 350 degree
oven for about 6 minutes to bake.

Keep an eye on these Shamrocks so they don't burn. 

No Drinking The Beer Now Irishmen because my
Irish Eyes Will Be Watching You!


Well look at that.  

In a wee bit of time and with the luck of the Irish
The Perfect Puff Pastry Shamrocks!


The Irish Guinness Beef Stew Is ready to enjoy!

Perfect for St. Patrick's Day.

It's The Luck Of The Irish for you Paddy :)


Toss in the peas for this Paddy.

Just before serving toss in some thawed frozen peas for
Taste & Green 

A Top Of The Morning With A Shamrock!


Now this looks and taste like St Patricks Day
with a big bowl of delicious

Irish Guinness Beef Stew!


Seconds please and maybe some Irish Soda Bread too :)


With The Luck Of The Irish
you may have some leftovers to freeze.

St. Patricks Day can be more than just one day!
