CHOCOLATE ICEBOX PIE

 


Chocolate Icebox Pie is incredible any time of the year but it is especially 
great to serve to that special someone on Valentine's Day.

This dessert is deliciously decadent with a rich, creamy, chocolate filling in
a crisp chocolate Oreo Cookie Crust with a generous amount
of homemade whipped cream.

This pie lasts great in the refrigerator for days if there is any leftover.
However the problem with that is it will turn into your
MIDNIGHT snack :)


Over a double boiler melt 8oz of semisweet chocolate chips and 1/2 cup
 of heavy cream until it is all melted. Once the mixture
is melted set it aside to completely cool.


For the pie crust ... place 25 classic Oreo cookies in a food processor 
and pulverize until only fine crumbs remain.


Melt 4 tablespoons of butter in a sauce pan.


Pour the butter into the Oreo crumbs and mix it all up.


Grease a 9 inch pie plate with butter and pour the cookie crumbs in.
Use your hands or a glass to tap the crumbs tightly into the bottom and sides of the pan.
Pop into the fridge and chill.


Meanwhile, prepare your whipped cream. Combine 1 cup of heavy cream and
one cup of powdered sugar in a bowl and beat to stiff peaks.


Perfect, now set this bowl aside.


Ya, go for it, have a lick :)


Place 16 oz of cream cheese into a large bowl to soften.


Pour the cooled chocolate ganache over the cream cheese.


With your mixer, give the bowl a spin until it is all combined.


Add in 3/4 cup of powdered sugar to the chocolate.


Plop in 1/3 cup of sour cream and 1 teaspoon of vanilla.


Give the bowl a mix with a spatula.


Add whipped cream that you prepared to the bowl and use a spatula to 
fold in by hand until all the ingredients are thoroughly incorporated.


Yes, you must have a taste...YUM!


Grab the pie crust.


Pour all that delicious chocolate mixture all over the Oreo pie crust.


Transfer the pie to the refrigerator to chill for about 6 hours or overnight.


Once the Chocolate Icebox Pie has chilled sprinkle over
the top some shredded semi sweet chocolate.

You can for sure slice and serve here, but....


I say take it over the top with some more Whip Cream.


Maybe even more Whip Cream!
