This easy homemade Chicken Noodle Soup recipe is cozy & delicious.
All the ingredients I am sure are in your pantry now :)
I was inspired to make this soup after having lunch at a fabulous new restaurant in Napa called
Scala Osteria
I loved how they diced up the vegetables super
tiny and the pasta was was also tiny called Acini di Pepe no.78.
It was so fabulous that I had to give it a go in my kitchen!
Not your ordinary chicken noodle soup :)
Dice up a bunch of celery, carrots and onion.
Toss them in a pot and saute with some olive oil till tender.
Add in a squirt of minced garlic and stir.
Dice up a roast chicken into bite size pieces.
Pour in two large containers of chicken broth and two cups of water.
Tumble in two Chicken Bouillon cubes.
Grab your diced up chicken :)
Toss the chicken into the pot and then add some....
salt & pepper
red pepper flakes
dried parsley
Stir and simmer on medium heat for about 15 minutes.
OMG my kitchen smells yummy!
Cook up about a cup of Acini di Pepe pasta, or more if you like :)
I added a few dashes of this seasoning to the soup because I love
the flavor it brings to lots of my recipes.
Put a lid on till you are ready to eat.
Time to EAT....
Take the lid off
Set the table and grab the pasta.
The pasta does not go into the pot of soup but just goes into the individual bowl :)
Ladle Up !!!
Grab the pasta and spoon in as much as you want to your bowl of soup :)
