GOUGERES (FRENCH CHEESE PUFFS)

 


Oh So French!
 Gougeres are savory cheese puffs that are slightly warm with a crisp shell
and a cheesy, pillowy interior. They are the perfect bite to pop
in your mouth between sips of sparkling wine or cocktails.

I suggest keeping scoops of dough in the freezer, ready to bake. You can slide
them into the oven straight from the freezer before your guests arrive!

I just love Gougeres. They are basically just cheese puffs with a better name!


Let's get our French Cooking on!


In a sauce pan combine ...

1 cup of water
8 tablespoons (1 stick) unsalted butter
1/2  teaspoon of salt


Bring the sauce pan to a boil on high heat.


Turn the heat to low and immediately add 1 cup of flour, whisking it into the liquid.


Whisk Whisk Whisk quickly and long enough for the dough
to get drier and much smoother, a minute or two
 should be enough.


Now just pull the dough off of the heat.


Transfer the dough to a bowl and allow it to cool for a few minutes.


You will need 5 eggs and mix them in one at a 
time with a hand held mixer.


Perfect!


The dough is sticky so grab a knife and get all 
the dough off of the blades.


With a spatula scrape all the dough down off the sides of the bowl.


Tumble in 2 cups of grated Parmesan cheese and give the
bowl another mix to make sure it is
well combined.


Line a sheet pan with parchment paper.


Scoop out the dough into approximately 1 tablespoon balls onto the pan.


Keep on scooping....


In a 450 degree pre-heated oven put the Gougeres in to bake 
but immediately turn the oven down to 350 degrees.

Bake the Gougeres for 25 to 30 minutes.


While Gougeres are baking I prepped more to freeze for a later time :)

Place the sheet pans like this in your freezer. After an hour put
the Gougers into a resealable freezer-safe bags.


See ya in an hour Gougeres :)


This sheet pan smells AMAZING!


Place the Gougeres on a sheet rack. I do have to say they taste
fantastic both piping hot or at room temp.


Yes, I had to have one straight away :)


Place the Gougeres on a pretty platter and share the Deliciousness :)


Have a bite between sips of Sparkling Wine 
and pretend you are in France!

Placed my frozen Gougers into freezer bags to enjoy later!

These yummy cheese puffs freeze great because they are only Parmesan cheese
which is a drier cheese, so they end up crisp and light as air.

It's the perfect snack to always have on hand :)
