CRANBERRY PUMPKIN BREAD

 


Love Pumpkin? Well I do TOO!

This extra delicious and super moist Cranberry Pumpkin Bread is just BURSTING
with Fall flavors that will take you well into the winter :)

This recipe is so easy to make and a guaranteed hit with friends and family 
this Holiday Season. This just might become a new family favorite.


In a large bowl add in...

3 Cups of flour
1 tsp of salt
1 tsp of baking soda
1 tsp pumpkin pie spice

Yes, still using my Halloween Spatula because it's orange :)


Give the bowl a good whisk.


In a medium bowl tumble in 2 cups of canned pumpkin.


Add to the bowl 2/3 cup of brown sugar.


Pour into the bowl and mix...

2/3 cup of granulated sugar
1 cup of canola oil
1tbsp vanilla extract


Crack 3 eggs and give the bowl a mix.


Pour the eggs into the wet ingredients,


Give the bowl a good whisking.


Stir the wet ingredients in to the dry ingredients, mixing just until
moistened and combined.


Grab about a cup of dried Cranberries and more even if you like :)


Chop the Cranberries up just a bit,


Toss the Cranberries into the batter and give the bowl another mix.


Grease two 8x4 inch loaf pans and line with parchment paper.


Start pouring the batter into the loaf pans.


Grab a spatula and evenly spread the pumpkin batter.


Bake the loaf pans in a 350 degree oven for about 50-55 minutes or
until an inserted toothpick comes out clean.


I smell 'Fall" in my kitchen now :)


Once the Cranberry Pumpkin Bread has cooled just pull the
toothpick out of the pan. A loaf for us and one for friends.


Slice it and eat it :)


This bread is so moist you don't need butter...

Wait...what?...Who would ever says no to butter on warm bread?

How Do You Eat Pumpkin Bread ?
Your fingers! Kidding, but no, really, its bread. So slice it and eat with
your hands or be proper and place it on a plate and use a fork.

You might also add Pecans.
