All you need are a few ingredients, one bowl, a spoon, and a loaf pan to make
the best Zucchini Blueberry Bread ever!
You will love this easy
recipe- it's freezer friendly and can be adapted with
with all kinds of fruit, like raspberries :)
First, shred up about 1 1/2 cups of zucchini.
Perfect Shredding :)
In a large bowl beat up 2 large eggs.
Add in....
3/4 cup of brown sugar
1 teaspoon of vanilla
Add in...
1/4 cup of granulated sugar
2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Give the bowl a good stir and then tumble in the zucchini,
1 cup of blueberries and 1/2 cup of flour.
Grease an 8x4-inch or 9x5-inch loaf pan with butter.
Pour the batter into the loaf pan and bake in a 350 degree oven
for about 50-60 minutes or until a toothpick comes out clean.
This smells so yummy!
Let the bread cool before removing it from the pan.
Dust with some powdered sugar all over the top.
Slice & Eat
