ZUCCHINI ROLLATINI

 


Zucchini Rollatini is just simply delicious!

This dish is made with fabulous summer zucchini stuffed with basil, cheese
and sausage, then rolled and topped with marinara sauce and mozzarella
and baked in the oven until cheese is hot and melted:)


Grab your favorite sausage, cook it up in a pan and then set it aside.


In a medium bowl beat 1 large egg.


To the eggs add in 1/2 cup of Parmesan cheese and 2/3 cup of Ricotta cheese.


Add in a pinch of salt & pepper and give the bowl a good stir.

Chop up about 1/4 cup of fresh basil.


Toss in the basil and give the bowl another stir.


Grab a Madoline and cut 3 zucchinis into about 12 slices lengthwise.


Summer Delicious!


Season the zucchini with salt & pepper on both sides, then cook them
in a pan with olive oil for about 2 minutes till they are
pliable but not fully cooked.


Grease up a 13 x 9 inch baking dish.


Spread about 1/4 cup of your favorite marinara sauce on the bottom of the baking dish.


Time for the sausage and cheese mixture :)


Lay the cooked zucchini slices out on a cutting board.


Spread the ricotta mixture evenly onto each zucchini slice. spreading to cover.


Sprinkle over the top with some of the cooked sausage.


Roll up the slices and secure them with a toothpick. Arrange them
seam side down in the prepared dish.


Perfect but not finished yet :)


Spread some marinara sauce over the zucchini rolls.


Top the zucchini with about 3/4 cup of shredded mozzarella cheese.
Now pull out the toothpicks.


Tightly cover dish with foil and bake in a 400 degree oven 
for 35 minutes or until cheese is hot and melted.


Oh does this Zucchini Rollatini smell divine!


Garnish the Zucchini Rollatini and use the marinara jar as a vase :)


This made for a perfect lunch for our house guest...but...something is missing!


John, open our favorite White Hall Lane "Pinot Noir" wine please.


Time to eat!


Have just one bite of mine because it is just too darn tasty!


Yes, you can have seconds!
