SKILLET ROAST CHICKEN AND POTATOES

 


When someone asks you what's for dinner, here's the answer...

Skillet Roast Chicken And Potatoes!

It's DELICIOUS!

This is the perfect weeknight comfort meal all cooked in one dish.

You cook the chicken and potatoes in two stages. So for the first stage have
a glass of wine and then for the second stage dinner is ready!
 
My guests loved this dish and I served it with just a simple salad 
and lots of Wine!


Grab about 6 bone-in skin on chicken thighs then
pour buttermilk all over the top to cover.


Let the chicken marinade in the Buttermilk for about 3 hours.

What this does is make the chicken thighs really tender.


In a small bowl mix together 2 tbs of mustard and a tiny
 splash of your favorite white wine 
and set it aside.

Great layer of flavor here!


Grab a nice looking skillet because you will be serving dinner 
right from the pot. Pour in some olive oil to cover.


Grab the chicken and lightly shake off excess Buttermilk
and then start placing the chicken into the skillet.


Little shake and place.


Spread the mustard mixture all over the top of the chicken thighs.


Some fresh Thyme over the top.

 
Dusting of some paprika for a wonderful smokey flavor.

Salt & Pepper

Pop the chicken into a 350 degree oven for 30 minutes.


While the chicken is cooking pour yourself a glass of wine and
slice up two large Yukon Gold potatoes with the skin on.


After 30 minutes pull the chicken out of the oven.


Set the chicken on a plate while you grab the potatoes.

 

Add some garlic to this amazing juice the chicken developed.


Set all the potatoes into the skillet. Add salt & pepper and 
give the potatoes a mix in all the juices.


Butter comes next and this is my favorite.


Dollop pieces of butter all over the potatoes.


Place the chicken on top of the potatoes and back
into the oven for another 30 minutes.


Omg this smells so good but not done yet :)


Place the chicken thighs on a plater.


Cover the chicken with foil to rest.

Place the potatoes back into a 450 degree oven 
for about 15 minutes to brown and crisp up.


While potatoes are cooking set up your plates for a
casual week night dinner party....

Don't forget the wine!


Potatoes are done now so grab the chicken.


Place the chicken on top of the piping 
hot potatoes and garnish with some parsley. Grab the salad and pour
the wine....It's dinner time.


Everyone loves chicken and potatoes...

One skillet meal may take a few minutes to make but the
clean up is pretty fast :)
