MEXICAN LASAGNA

 


Oh yes, that's right. I made a Mexican Lasagna with tortillas instead of noodles :)

This is one of those easy weeknight recipes that your entire family and friends
will get excited about when they see it come out of the oven,
all steamy and cheesy and gooey!

It's so delicious that you will make it often and not just for Taco Tuesday!


To get started.... Put on some Mexican music and whip yourself up a refreshing Margarita!


Dice up one large onion and toss it into a large dutch oven.


Grab 2lb of ground beef.


Cook the ground beef with the onions. Drain grease if needed.


Your going to need 3 or 4 of these Taco Seasoning packets 
which will depend how spicy you like your
Mexican food.

You will need to set aside some of the seasoning for the sour cream.


Toss in 3 packets of Mexican seasoning to the cooked beef, cook on low heat.
Give the pot a good mix.


Add in a cup of water to the pot.


Add in a bit of salt and have a taste.


Toss in about a cup of your favorite salsa to the pot.
Give the meat a stir and turn off the heat.


In a separate bowl, beat together 8 oz of cream cheese
and 16 oz of sour cream.


Sprinkle in about 1/2 a packet of the Taco Seasoning to the cream mixture.


Spread a bit of the meat mixture on the bottom of a 
9 x13 casserole dish for the first
layer of the Lasagna.


For the next layer tear up some flour tortillas to cover the meat.


Spread some of the cream mixture over the tortillas.


A dusting of the shredded Mexican Cheese Mix.


Some of your favorite salsa over the top.


Tumble some black olives all over.


Continue the layers 3 more times :)


The last layer of the meat mixture.


Top with more cheese and black olives.


You can wrap the Mexican Lasagna in saran wrap and store
it in the refrigerator to bake the next day or even later.


Bake the Mexican Lasagna in a 350 degree oven for 
about 1 hour uncovered. It should be 
all bubbly and hot.

Check on the Lasagna at 45 minutes because all ovens are a bit different.


Little Cilantro for some garnish!


 Salsa over the top and a side of Guacamole....

Excuse me we all need our Margaritas please!!!!!
