Savory Zucchini Cheddar Bread is absolutely delicious. Whether you grow your
own or buy them at the market zucchini is always plentiful this time of year.
I love zucchini cooked so many different ways but I'll take them installed in a dee-lish
easy to make cheesy bread. So If you got a few ZUKES hanging around
this is a perfect way to use them.
You most likely have all the ingredients in your kitchen now:)
Grate up about 1 1/2 cups of zucchini.
Wrap the grated zucchini in a paper towel and squees until some of the liquid
releases. You don't need to completely dry it out.
Measure out 1 cup of milk and add in 1 tablespoon of vinegar.
You just made homemade Buttermilk :)
In a large bowl tumble in 2 cups of flour and 1/2 teaspoon of salt.
1/2 teaspoon of baking powder.
2 teaspoons of baking soda.
Pour into the buttermilk 3 tablespoons of melted butter.
Give the buttermilk a good whipping.
Add the milk mixture into the dry mixture being careful not to over mix.
Toss in 1 1/2 cups of grated sharp cheddar cheese.
Drop in the grated zucchini.
With a pink knife chop up 2 green onions.
Sprinkle the onions into the bowl and give it all a mix.
Perfect!
Grab a 9x5 loaf pan and butter it up.
Pour all the batter into the loaf pan and bake in a 350 degree oven for 1 hour.
If a toothpick comes out clean after an hour, bread is done :)
The smell coming out of this oven is insanely DIVINE.....
As the story goes, cool for 10 minutes and no longer because......
who can wait any longer to have a slice.
The beauty of this bread, besides the amazing flavor, is it's all mixed in
one bowl and no waiting around for it to rise!
