IRISH REUBEN DIP


Top Of The Morning To You Leprechauns!

There's nothing like a delectable holiday-themed appetizer to get your St Patricks's Day
festivities started. This ooey gooey Reuben dip is the perfect combination
of Swiss cheese, Corned Beef and Sauerkraut all smothered in a 
dreamy Thousand Island cream cheese sauce.

It combines all the flavors found in a classic Reuben Sandwich and transforms
them into a fabulous creamy dip :)


Start off by whipping up your own Corned Beef or buy 
your Corned Beef from your local deli.


Chop up about 6 oz of the Corned Beef into small little pieces with a "Green" knife.


Set the Corned Beef aside.


Drain and squeeze well all the juices from about a cup of Sauerkraut.


Grab some room temperature cream cheese that has 
Irish Green Chives :)


Plop about 4oz of the cream cheese into a medium size bowl.


To the cream cheese pour in about 2/3 cup of your Thousand Island dressing.


Toss in one cup of real mayonnaise.


Give the bowl a beating!


Grate up 2 cups of fresh Swiss cheese.


Toss the Swiss cheese into the bowl.


With a "Green" spatula give the bowl a stir.


In goes the star of the dip...

Corned Beef :)


Toss in the Sauerkraut.


Use an oven proof serving dish in a size of your choice, scoop
in the dip and top it of with more cheese.

You can see I have some leftover dip to serve another day :)


Off to a 350 degree oven on a cookie sheet for 30 minutes.


While the Reuben Dip is cooking....

Grab a Shamrock cookie cutter and Rye bread. Make some Irish Dippers :)


Well that should be about enough.

Toss the Shamrocks in the oven at 350 for about 4 minutes till crisp.


Perfect little Shamrocks to be dipped.


Oh My Irish Eyes Are Smiling :)

Garnish the dip with some "Green" Irish chives.

Irish Guinness Beer :)

Leprechauns, which like to pinch anyone they can see!
