LEMON & ROASTED ASPARAGUS PASTA SALAD


This is a great Pasta Salad to bring to a gathering or to grab a fork and
dig right in. It's hard not to eat the whole thing is you ask me.

My love for soft and sweet, that tart and tangy and the perfectly pretty Lemons. I
cooked this sauce and it taste smooth and creamy and so delicious
you would swear there was cream actually in the dish.


Crack one egg yolk into a sauce.


Add in 2 tablespoons of lemon juice and 1-2 cloves of minced garlic.


Give a good whisking.


Slowly pour in 2/3 cup of warm water and whisk.


Now pop the sauce pan on the stove top and heat thoroughly.


Add to the pot 2-3 tablespoons of melted butter. Whisk and set aside.


Grab some fresh basil leaves from your garden and slice away.


Toss the basil into your lemon butter sauce.


Grab your 1lb of cooked pasta.


My beautiful asparagus from the Farmers Market were roasted
with just a drizzle of olive oil, salt and pepper.


Just slice up asparagus and toss into the bowl with the pasta.


Pour in the yummy buttery lemon sauce all over the bowl and mix it up.
Salt and Pepper to taste.



Garnish with lemon slices and shredded Parmesan Cheese.


This Lemon & Roasted Asparagus Pasta Salad can be eaten Hot, Cold or Room Temperature.
It certainly can be eaten right out of the bowl NOW...
