I swear buttermilk is magic. It seems to turn everything into gold!
This Blueberry Buttermilk Cake is super moist and super delicious.
It is a summer cake like but not a dessert like...it's a
Breakfast treat busting with Blueberries :)
Grab 2 cups of your Farmers Market Summer Blueberries.
Lets get our cake on....
Preheat oven to 350. In a large bowl add 8 tablespoons of room temperature
butter, the zest from one large lemon and one cup of sugar.
Cream it all together until light and fluffy.
Crack in one egg and 1 tsp. of vanilla ....mix away.
Meanwhile toss the Blueberries with 1/4 cup of flour and set it aside.
In another bowl add in 2 cups of flour, 2tsp baking powder and 1 tsp. of salt...Whisk together.
Pour in 1/2 of the flour mixture to the creamed butter and stir together.
Next pour in 1/2 cup of Buttermilk and stir with a spatula.
Tumble in the rest of the flour stir again till all incorporated.
Take the Blueberries and drop into a colander and shake off all extra flour.
Fold in all the Blueberries into the batter.
Grease an 8 inch square pan with butter or non stick spray.
If you have parchment paper on hand line it on top of the butter.
Evenly spread the pan with the batter.
Sprinkle the batter with tablespoon of sugar and off
to the oven for 35-45 minutes. Check
with a toothpick for doneness.
Baked to perfection and smells divine.
But seriously, who doesn't need good, seasonal, berry, cake, recipe in
their morning- treat repertoire?
The parchment paper makes it so easy to pull this cake right on out of the pan.
This cake is delectable! Sorry to my family you won't be getting a bite this time.
