ROASTED EGGPLANT HUMMUS


Craving a taste of the Mediterranean? This Roasted Eggplant Hummus is
absolutely delicious and super easy to make.

With just 6 ingredients and in an hour you have a tasty side dish or appetizer
that everyone will love!


Grab two Eggplants from your garden or market.


Peel the Eggplants.


Cut into thick slices. Sprinkle both sides heavily with salt, let them sit
for 15-30 minutes.


Then place them on a cookie sheet and drizzle with 
olive oil and salt & pepper.


Toss on to the baking sheet several cloves of garlic
and off to a 400 degree oven for 30 minutes.


Strain two cans of chick peas while the Eggplant is roasting.


Go pick a lemon from your garden and grab your blender.


Perfect roast Eggplant...YUM


Pour all the Eggplant and olive oil into the blender.


Layer in Eggplant and chick peas into the blender and the juice of one lemon.


Little salt & pepper and blend away!


Add a bit more olive oil and blend to the consistency you like.


Have a little taste to see if maybe you want more salt or pepper
or maybe you want to add red pepper flakes....


You could serve the Roasted Eggplant Hummus right way or
store it in the refrigerator for several days.


We were having house guest coming to stay with us in St. Helena 
the following day so I just pulled out my pre-made hummus.

Garnish and drizzle olive and sea salt.


 You can serve this with just about anything :)


Grab a Mimosa while you plate your board! 

Yes, that is Burrata cheese with a bit of olive oil and salt & pepper on the platter too.
