PEA SALAD WITH RADISHES


Summer salads I can't get enough. This Pea Salad with Radish and Creamy Dill Dressing will
be happening all summer long. 

First of all it is absolutely, positively easy to make. Second it is Delicious!


Grab some bright red Radishes from your garden.


Slice the Radishes on a red cutting board and toss them into a bowl.


Whisk together...

2 tbsp rice wine vinegar
2 tbsp light sour cream
1 tbsp fresh dill
1/2 tsp salt
1/4 tsp block pepper


Open up some fresh peas that have not been cooked yet! I used 4 bags from Trader Joes.


Blanch the peas in boiling salt water of 70 seconds. You don't want them mushy.


Give the peas a good cold rinse to stop the cooking.


Chop up one onion.


Lets put the salad together.


Tumble the peas in with the radishes along with the onions.


Add in the creamy Dill Dressing.


Give it all a good mix with a bit of salt and pepper and have a taste.


I felt like the salad needed a bit more dressing. So I added a bit more

Sour Cream
Dill
Rice Wine Vinegar


Enjoy it now!

 

Or.....put a lid on it and pop it in the refrigerate for a few days.

You will love this salad.
