See how easy it is to make Double Chocolate Zucchini Bread using
fresh shredded zucchini out of your garden.
Tuck away a loaf or two into the freezer for a sweet breakfast or a last minute
dessert because it is rich, fudgy and moist...Topped off with
a hand full of chocolate chips :)
Start with an arm size zucchini and grab this tool.
Shredding the zucchini.
With a green and white towel squeeze excess moisture from the zucchini. Don't skip this step!
Continue shredding....Well I took care of that huge zucchini :)
There you have it....two cups of shredded zucchini.
In a large bowl add...
1/2 cup of brown sugar
1/2 cup of white sugar
1tsp vanilla
1/2 cup of oil
Crack in two eggs.
Toss in the zucchini.
Give the bowl a good mix.
Scrape the sides of the bowl and set it aside.
In a separate bowl combine...
1 cup of flour
1/2 cup of cocoa powder
1tsp baking soda
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
Whisk all the dry ingredients together.
Add the dry ingredients to the wet ingredients.
Mix until just combined.
I said Double Chocolate...Right
Fold in 1/2 cup of chocolate chips.
Definitely have a taste. OMG soon yummy!
Grease your loaf pan.
Pop this into a preheated 350 degree oven for 30 minutes.
Smells so good in my kitchen.
Top with more chocolate chips because
we can!
Go grab some milk and have a slice.
