Talk Derby To Me!
Having a Kentucky Derby Party or just sitting around with a few friends? I
know your going to need a few fancy bites to enjoy the race.
You will love these spicy cookies with a sweet red currant jelly center.
Grab a cup of cold unsalted butter and cut into cubes.
Toss the butter and 8oz of sharp Cheddar cheese into the food processor.
Pour in 1 1/4 cups of flour.
1/2 teaspoon of Tabasco.
Teaspoon of Grey Poupon mustard.
Drain about 2 Tbsp of chopped pimientos and tumble them into the food processor.
Put a lid on it and give it a few good pulses till well combined.
Transfer the cheese mixture into a bowl.
Roll the dough into 1-in balls and place them on a parchment lined baking sheet.
Press your thumb into centers of the cheese balls to leave deep indents.
Refrigerate until very firm at least 30 minutes.
Bake the cookies in a 375 degree oven, rotating pan halfway through cooking,
until light golden brown around edges, 18 to 22 minutes.
Perfectly done.
Transfer the cookies to a wire rack and let cool completely.
The race is about to start.
Once cooled, spoon the red currant jelly into centers.
Hold your horses the Kentucky Derby has started.
